I struggle with finding a breakfast that can be ready for me during the work week, but is also low calorie, high protein and tasty. Doesn’t seem like too much to ask, right?! (Kidding).
I tried this baked lemon blueberry cottage cheese oatmeal out even though I was skeptical about adding the cottage cheese… and I love it! It is tasty and filling! You don’t taste the cottage cheese in it at all. Even though there are oats in it, I feel like the cottage cheese helps take away that dry oatmeal taste.
The lemon blueberry flavor makes it taste so fresh and yummy! Eating it warmed up after storing in the fridge makes it taste like you’re eating a treat you shouldn’t when trying to watch what you’re eating.
What You Will Need:

Cottage Cheese – I used low fat, small curd 2% milk fat. I haven’t tried this recipe yet with any other cottage cheese, but I don’t see why you couldn’t use another kind.
Rolled Oats – I used quick oats.
Fresh blueberries – Frozen blueberries could be used instead. I would recommend thawing them prior to adding them to this recipe though.
Lemon – if you don’t like the blueberry lemon flavor, you can make this recipe without the lemon to just have it be blueberry. If you do use the lemon, it is the zest of the lemon, not lemon juice.
Eggs
Maple syrup – you can also use honey
Vanilla extract
Salt
Chia seeds – once again these are optional. I love adding them to different breakfast recipes for added fiber and gut health benefits, but it doesn’t make or break the recipe itself.
Mixing bowl – one medium size bowl is all you need while prepping this recipe!
Casserole dish – 8x8in. I wouldn’t try to make this recipe in any dish bigger than that. The dish turns out fairly thin. Even if you double this recipe it would fit nicely in an 8x8in dish.
Step By Step Instructions:
Preheat oven to 350. Grease a 8x8in casserole dish and set aside.
In your medium mixing bowl whisk together: 1 cup cottage cheese, 2 large eggs, 1/4 cup maple syrup (or honey), 1/4 teaspoon vanilla, 1/4 teaspoon salt, zest of 1 lemon and 1/2 teaspoon chia seeds.


Once all the ingredients are well combined, add in the 1/2 cup of rolled oats. Stir together with a mixing spoon until well mixed.
Carefully fold in 3/4 cups fresh blueberries. You can do less or more of blueberries. I first started with using 1/2 cup of blueberries, but wanted more. 3/4 cup seemed to be the sweet spot for me where I felt like there were plenty of blueberries in the mix.

Pour mixture into your prepared casserole dish and even the mix out throughout the dish. I had to push a few blueberries around because some clustered in the same area while trying to carefully fold them into the mix.

Place in the dish in the oven and bake at 350 for 30-35 minutes. Mine took 35 minutes. You want the dish to be a little golden brown on top and not a lot of liquid on the top. The bake will feel on the firm side.

Storing – I let the dish cool on a cooling rack for about 20-30 minutes before moving it to the fridge. When you’re reading to eat you can cut the bake into bar sizes. You can eat this bake cold, but I found it to be WAY better warmed up. I reheated 2-3 bars in the microwave for about 20 seconds.

- 1 Cup Cottage Cheese

- 1/4 Cup Maple Syrup (or Honey)
- 1/4 Tsp Vanilla Extract
- 1/4 Tsp Salt
- Zest of 1 Lemon
- 1/2 Tsp Chia Seeds
- 1/2 Cup Rolled Oats
- 3/4 Cup Fresh Blueberries
Instructions:
- Preheat oven to 350.
- Grease 8x8in casserole dish and set aside.
- In a mixing bowl, whisk together cottage cheese, eggs, maple syrup, vanilla, salt, lemon zest and chia seeds
- Mix in rolled oats.
- Fold in fresh blueberries, carefully.
- Place mixture in prepared casserole dish evenly.
- Bake at 350 for 30-35 minutes until firm, minimal liquid on top and slightly golden brown.
- If storing in your fridge for future breakfasts, cool casserole dish on cooling rack for 20-30 minutes before placing in the fridge.
- Cut in bars to eat. Eat cold or reheat 2-3 bars for about 20 seconds in the microwave.
