These cheesy jalapeño chicken burgers are perfect to throw on the grill this summer. Made with fresh ingredients make them the perfect, light meal during those hot months.
What you will need:
- Ground Chicken – I used one-pound of ground chicken that made six burgers. This was perfect for just my husband and myself.
- White Onion – You will only need one of these. You could also use red or yellow onion. I prefer white onion and they are usually the cheapest.
- Fresh Cilantro – One bundle is enough or less even depending on how your grocery store sells them, you won’t end up using too much.
- Minced Garlic or Garlic Cloves – if you want to stick to fresh ingredients you can buy garlic cloves then mince them yourself. I go the easy route and use minced garlic from the store.
- Jalapeño – Just one medium sized jalapeño will do the trick. I only used about 3/4 of the jalapeño. You can remove seeds or include them for more spice. I did remove them for mine.
- Lime – I put in juice from half of the lime. You could also use lime juice purchased at the store if you prefer.
- Ground Cumin
- Paprika – This could be sweet, smoked or Spanish. I already had Spanish Paprika in my pantry so I went with that.
- Shredded Cheese – You can get creative with what kind. I used Colby Jack, but I think any kind of shredded cheese would be good in this.

What is needed to cook:
- Medium size bowl for mixing
- Plate for patties
- Grill, blackstone, griddle or skillet to cook burgers on
For assembly of burgers:
- Hamburger buns
- Additional toppings could include any of the following: tomatoes, pickles, extra jalapeños, avocado, lettuce, bacon, mayo, mustard, ketchup, hot sauce
Ingredients:
- 1lb ground chicken
- 1/4 cup finely diced onion
- 2 tbsp finely chopped cilantro
- 1 garlic clove, minced (1tsp minced garlic)
- 3/4 of a medium size jalapeño, seeded and finely chopped
- 1/2 tsp ground cumin
- 1/2 tsp paprika (sweet, smoked or Spanish)
- Juice of 1/2 lime (about 1/2 tbsp)
- 1/2 cup shredded cheese of your choice (I used Colby Jack)
- 1/2 tsp salt
- 1/4 tsp pepper
Instructions:
- Preheat the Grill (or your method of cooking): Heat to medium-high. Lightly oil surface to prevent sticking.
- Prepare the burger mixture: In a medium bowl, mix together ground chicken, onion, cilantro, minced garlic, jalapeño, ground cumin, paprika, lime juice, shredded cheese, salt and pepper. Be careful to not over mix.
- Form the patty: take enough mixture to form a medium size ball (or smaller if you want sliders or smash burgers) then flatten the ball in your palms. This should make about 6 patties give or take the size you want your burgers.
- Grill: Toss patties on the preheated grill. Grill for about 5-6 minutes on each side. Once flipped and they have about 1-2 minutes left, add any additional cheese if desired.
- Serve: serve immediately on hamburger buns with any desired toppings listed above.
